For hundreds of years the Chinese cooks had a well kept secret. They soaked their shrimps (prawns) in cold running water for many hours to make the shrimp meat firmer, crunchier and more succulent. This method is time consuming and expensive. The secret of the OCN-R is that we are more cost-efficient as these tubs provide excellent temperature consistency during soaking, resulting in savings in ice, water, labor etc. The tough, spacious and durable design also provides for better motor / paddle circulation.
